In March 2024 I visited Dallas Texas. This photo is of the 30 foot tall eyeball sculpture made from realistically rendered fiberglass. Other places in Dallas that we visited was the impressive 66 acre Arboretum and Botanical Gardens where you can easily spend half a day wondering around. Dallas is also home to The Sixth Floor Museum, the main exhibit is all about John F Kennedy's assassination. A must stop for lunch or dinner is Terry Black's Barbeque, Dallas's premiere destination for legendary Texas Barbeque. Tip - try the secret recipe black frozen margarita, very delicious.

New Orleans, famous for Creole and Cajun cuisine, jazz music and brass bands, historic architecture and it's annual celebrations and festivals, mostly notably Mardi Gras. I was lucky enough to visit New Orleans in March 2024 and it lived up to it's reputation. Make sure to head to the Mardi Gras World, where you can get a behind the scenes look at the Mardi Gras traditions and learn all about the year-long float building process. A great way to learn about the Creole and Cajun cuisine is to take part in a cooking class.

A week in Fiji to immerse yourself in Fijian culture was not long enough but a great start. From authentic cooking classes with traditional bamboo sticks to visiting a local village and zip lining through the forest there is so much to see and do in Fiji.
